Rainbow Salad

A colorful salad with nutrients from each color of the rainbow!

Ingredients

  • 2 handfuls kale chopped
  • 1 large carrot grated or finely chopped
  • 0.5 cup purple cabbage finely chopped
  • 0.5 whole red bell pepper chopped
  • 0.5 whole yellow bell pepper chopped
  • 0.5 cup broccoli chopped and steamed
  • 1 tbsp sunflower seeds
  • 1 tbsp pepitas
  • 1/4 whole avocado chopped

For the Dressing

  • 1/4 tbsp water
  • 1 tsp ground ginger
  • 3 tbsp tahini
  • 2 tbsp maple syrup or any liquid sweetener
  • 2 tbsp miso paste
  • 2 tbsp apple cider vinegar
  • 1 tbsp amino acids or soy sauce

Instructions

  1. Steam the broccoli in a steamer over boiling water with a lid until it softens, about 5 minutes. Allow to cool before tossing with other ingredients.

  2. To make salad dressing, blend all ingredients until smooth. Add more water if you need it to be thinner.

  3. To assemble the salad, toss all ingredients in a bowl with a drizzle of dressing.
